We are currently looking for a Chef to join the Villawood Immigration Detention Centre catering team. The Chef will be responsible for the preparation and service of all dishes on the menu on a daily basis, in compliance with all relevant food safety legislation. The Chef must ensure clients are provided with a multi-choice menu (three course meal at lunch and dinner) with a choice of hot meals. The Chef should hold high personal hygiene standards and comply with food hygiene regulations with attention to food service equipment cleaning, work areas and providing clients with food that is wholesome, nutritious and well presented.

Your principle accountabilities include but are not limited to:

  • To maintain an exceptionally high standard of food production service and food hygiene.
  • To be conversant with craft skills, menu knowledge, presentation and display of foods and portion sizes and be able to assist in the training and development of other personnel working in the Catering Department.
  • To maintain the preparation and work area in a clean and hygienic condition at all times and the thorough cleaning of these areas.
  • To lead food preparation (ie. cutting, slicing and plating) and service of functions required.
  • To observe all statutory health and hygiene regulations and reporting any hazards you may encounter at your place of work.
  • To maintain a high standard of personal hygiene. To appear on time for duty in a clean and tidy uniform with the correct footwear.
  • To undertake any other duties as may be reasonably required.

 

To be succeessful in this role you will have:

  • Certificate III Hospitality (Kitchen Operations) or equivalent
  • Basic Food Hygiene Certificate
  • Familiarity with HACCP practices
  • Minimum of two years experience in medium to large scale catering
