Our Christmas Island Immigration Detention Centre site are seeking a highly experienced Catering Manager that has a proven ability in managing a large scale catering operation in either a remote location or multidisciplinary site that is looking for a new challenge. This key role will see you take accountability for overseeing the contractual obligations from a catering perspective to the governing bodies for the site.
You will provide leadership to a highly productive team of catering employees, who are committed to delivering a high quality varied and healthy menu, which takes into account the religious, dietary, cultural and medical needs to all detainees at the centre.
Operating in a remote location provision planning is vital, therefore you will need to forecast the needs of the operation from a catering perspective and work in partnership with the warehousing team to ensure that ingredients are sourced in and stored in an effective and consistent manner. Strong financial and business acumen, including a good understanding profit and loss, budgeting and reporting will also be required in this role. Ideally candidates will possess experience working with SAP or Delegates systems.
On a day to day basis, this role will see you interacting with both employees and detainees at all levels. You will be required to regularly interact with detainees with regard to their catering requirements. We are seeking a candidate that is looking to maintain and further improve an effective team by providing sound leadership to a team of committed professionals. In addition to engaging employees, you will also need to manage performance as required.
Essential Qualifications: Certificate III Hospitality (Commercial Cookery or Trade Qualifications).
Desirable qualifications: Degree in a relevant area of study; Certificate IV 40104 TAA – Trainer & Assessor; HACCP Certificate
We would expect the successful candidate to have a minimum of 5 years’ experience working or operating a large industrial catering organisation.
- Extensive knowledge of HACCP practices and materials used in the food service procedures coupled with the ability to co-ordinate the demands of a food service operation and display a thorough knowledge of administration techniques and personnel policies and procedures.
- Be able to demonstrate Quality Management systems, sound computer skills, procurement and stock control monitoring processes
- Good verbal and written communication skills
